Is It Safe to Consume Foods after Expiration Date? - Part 1 – Food 16

Surprisingly that no federal regulation to impose “product dating.” However, foods for infant are required to include “expire dating.”

The institution called as “Food Safety and Inspection Service (FSIS)” requests voluntarily to label of dating some products.

Yes, quite strange for me that not all foods are required to put stickers or inks of expired dates, including:

- meat
- poultry
- eggs

We may find the following phrases in the market, especially at the big groceries in the USA:

- use by
- sell by
- best if used before

Use by” phrase means “the last date recommended for the use of the product.” Thus, not a safety date.

Phrase of “sell by” is used by a store management to display the products for sale to consumers. It is not relate to quality or safety of products.

Shredded Rotisserie Chicken with Purple Bell Peppers – Food 15

We talked little bit of Purple Bell Peppers at previous posting:

I believe the taste of raw pepper is crisp, but less sweet than red and yellow ones.

I prefer to sauté those peppers, added some slices:

- sweet yellow onion
- green onion
- and red tabasco peppers for flavors.

Then I mixed the slices of purple bell peppers with the shredded (cooked) rotisserie chicken.

As you know that sauté is a technique to fry food with small amount of margarine or fat.

We usually use little fire with oil to coat the food in order to:

- prevent sticking to the pan
- conducting heat to foods

The mixed of purple bell pepper with the shredded rotisserie chicken was very tasty and a little bit spicy.

Purple Bell Peppers in the Farmer Market – Food 14

We visit nearby farmer market couple days ago. It was quite surprisingly, we saw first time the purple bell peppers.

You may see the photos that we took.

These purple peppers have the same shapes compared to other color of bell peppers like:

- green
- red
- or yellow peppers

Actually, the bell peppers not really “solid” purple, but kind of “stripes” purple.

Searching through internet, we found many source, one of them reported by Goldy, R (2012: Green bell pepper showing purple striping due to cool temperatures in September).

Two possibility cause of purple bell peppers:

- if temperature too hot, immature bell pepper to be purple (stripes or half purple)
- if temperature too cold, green bell pepper will develop stripes purple.

We thought, in case in Louisiana, the temperature quite hot nowadays, about F 88* (C 31*) degree. Hence, the bell pepper tends to be stripes or half purple.

The difference with other bell pepper is that the white color dominates the inside part of the peppers and the texture of its flesh.

The purple is not covering all the fruit of peppers, it is just one half of the fruits (just stripes), so the peppers are look cute in this half purple.

Blueberry is One of Fruits Rich in Antioxidants – Food 13

We have blackberry in our backyard, but the taste is not so sweet, hence, we rarely harvest its.

Our blackberries seem to be source of foods for wild birds which visit our backyard during spring and summer seasons.

We love to consume berries, edible berries off course. Just few of them to mention are:

- raspberries
- blackberries
- Cranberries and blueberries

By reading the article written by Kiersten Hickman, 2022 (Surprising Effects of Eating Blueberries, Says Science) that blueberry contain high concentration of antioxidants.

An antioxidant called as anthocyanin has multiple functions, they may include:

1) Lowering blood pressure:

- improve health of our heart

2) Lowering LDL (low-density lipoprotein) cholesterol

- cardiovascular disease risk might be reduced

3) Helping to fight free radicals

- reduce risk to have chronic diseases such as cancer

4) Improve weight maintenance

- lowering type 2 diabetes risk

When the Georgian Chicken Came to My Kitchen – Part 2 – Food 12

You may read the previous post (Part 1):

Bay leaves and allspice give good-tasting in this dish.

Then, I looked what I had in my fridge. Okay! I had:

- chicken breasts
- tomatoes
- and celery.

Cilantro was out, I used it for cooking tom yum last two days ago, so I would use celery instead of cilantro.

I also had:

- dried parsley
- dried chives and died dills.

These ingredients were good for me to get started a new recipe, a Georgian cuisine. It did not take long to prepare and cook it, and here, the Georgian Chicken from my kitchen.

For this moment, the Georgian chicken in my kitchen used celery instead of cilantro, but next time I will be well prepare for the ingredients and I will have the exactly Georgian Chicken with true Georgian flavor.

When the Georgian Chicken Came to My Kitchen – Part 1 – Food 12

I was excited reading and commenting the Natalia's blog. She just posted the savory chicken recipe that she called Georgian Chicken:

I had curiosity about this recipe. The name of this chicken recipe was intriguing for me.

I was not alone, one of my blogger friends also wondered about this name, and she asked Natalia: “The name of the chicken was George?”

This chicken recipe is from Georgia, the name of a country. I believe you know where Georgia is.

Yes, Georgia was a former Soviet Union, and became independent as a country in 1991.

Surely, my friend Valerie does not know this recipe, because this recipe might be not familiar in Georgia where is Valerie from.

Yes, Valerie was born and raised in Atlanta, Georgia. Here, Georgia is a name of state in the Southern part of USA.

What is the special from this recipe?

In this recipe, Natalia used white meat chicken (chicken breast) and bunches of vegetables:

- a cup chunk tomatoes
- a bell pepper
- cilantro
- or parsley
- or dill.

Corned Beef Harsh - The Popular Breakfast in Louisiana – Part 2 – Food 11

The menu originally came from France to America. Based on googling, the menu is quite popular in the countries such as:

- Britain
- Philippine
- Ireland

Certain section of beef such as brisket (sometimes with navel and muscles) was chopped, usually small rectangular forms.

The diced meats are soaked in a flavor for several days.

The corned beef then mixed with chopped of:

- potatoes
- cooked carrot
- onions
- bell peppers
- garlic scallions
- and other spices.

Then, ready to be cooked, not take long to cook. It is simple breakfast or lunch or dinner in many states across America.

However, in New Orleans, Louisiana, corned beef harsh is very popular menu for breakfast.

There are many restaurants provide corned beef harsh for breakfast. In my town, Baton Rouge, I can find more than 5 restaurants sell this meal.

Corned beef harsh or alternative menu such as smoked slab cost for US$ 10.00. Additional cost if you add eggs or desserts.

Corned Beef Harsh - The Popular Breakfast in Louisiana – Part 1 – Food 11

We are in Louisiana face natural disasters almost every year. The disasters may include such as:
- storms (snowstorms, hurricanes, tornadoes)
- floods.

Natural disasters may lead to closing public facilities and services in our city and state such as:

- local government administration
- all parks
- libraries
- recreation centers or facilities
- public transportation
- trash and recycling collection
- groceries
- etc

Relevant authorities suggest citizens to assemble supplies for natural disaster preparedness.

Some important supplies are:

- water
- foods (non perishable foods)
- Battery powered radio
- Flashlight, extra batteries
- First aid kit
- Infant formula and diapers
- Sleeping bags or warm blankets
- Fire extinguisher
- etc (whatever essential for you and family)

Moreover, we never forget with canned foods. We love to have some canned foods such as:

- corned beef
- canned tuna
- canned sardines
- vegetable, especially corned and tomatoes

Corned beef is one of our favorite canned foods as well as Louisiana people, and one of favorite breakfast menus in Louisiana is corned beef harsh.

What is a corned beef harsh?
